Ingredients:
– Egg yolks
– Icing sugar
– Dry white wine
– Sicilian Marsala wine
– Berry
– Vanilla ice cream
Method:
– Crack 3 egg yolks into a mixing bowl add icing sugar and whisk it on a bain-marie until thick, then add dry white wine and Sicilian Marsala wine and continue whisking for about 5 minutes.
– Place in a chilled wine glass a base of wild berry compote topped with a vanilla ice cream scoop and add the egg mixture to the glass, decorate with fresh mint leaves
