Ingredients: Pan seared scallops served with green pea and sweet potato cream, mushroom pickle and crustacean sauce
Method:
Dry the scallop with a napkin and season with salt and pepper. Pre-heat butter in a pan, add thyme and cook the scallop over a medium heat until medium rare. For the sauce, cook the lobster shell, carrot onion, celery and white wine in a pan until all the flavors are released. Finely strain the liquid and serve with the scallop.
