Hong Kong Suckling Pig at The Royal Kitchen, The Royal Paradise Hotel & Spa

With this delicious dish is you can eat both the meat and the crispy skin, it is very crispy. Enjoy with pickles and our special sauce.

Ingredients:

1. Whole pig (size 2.5kg)

2. Marinating powder
– ½ tablespoon of pure refined sugar
– 1 teaspoon of Chinese five spice blend (‘Pae-Lo’ Powder)
– ½ teaspoon of refined salt

3. Marinating sauce (smear onto on the pig’s skin)
– 2 tablespoons of vinegar
– 1 tablespoon of black vinegar sauce
– 1 tablespoon of glucose syrup
 
 Method:
1. Clean the pig, removes the bones and spread it out
2. Coat the pig skin with marinating sauce
3. Fermented with the marinate powder for 45-60 minutes
4. Leave to stand about 30 minutes
5. Place pig in the oven, heat 180-200 degrees C, cook for 25-30 minutes
6. Remove pig and pour hot oil on its skin. (Note that it’s enough when the pig’s skin becomes golden yellow)
7. Cut into bite-size pieces
