– Rice crispy crumb (unsweet) 20 gr.
– Parmigiano mousse 20 gr.(Parmigiano and heavy cream)
– Green herb sauce 10 gr. (Fresh Italian parsley, garlic, onion,anchovies, caper and extra virgin olive oil)
– Seasonal Fresh truffle grated 3 gr.- Red rock salt 2 gr.- Peanut oil for deep fried 250 ml.
– Peeled poached egg and coat with rice crispy crumb bring to deep fried in peanut oil for 15 Second
– On the plate Put parmigiano mousse and on top with green herb sauce- Put the egg on top of sauce sprinkled with Red rock salt and fresh truffle grated
– dropped with extra virgin olive oil and micro green
