To follow his dream, Chef Alessandro Martinelli, executive sous chef of Hyatt Regency Phuket has had a long journey from Italy to Thailand to combine his talents and passion and to prepare some of the best dishes we’ve ever tasted.

After work experience in Italy, Switzerland, Spain, and London, Chef Alessandro moved to Asia and the Hyatt Regency Baku Azerbaijan was his first port of call. Three years in China helped to make him skilled in traditional Asian dishes.

And now Hyatt Regency in Phuket proudly welcomes him as their executive sous chef. He was originally inspired by home cooking: “I love to cook. Since I was young I was always interesting in cooking, being in the kitchen with my mother and grandmother – stealing secrets from them on how to cook, how to make traditional dishes. Finally I decided that this would be my job, so I started to focus on this.”

The main menu here is original Thai cuisine but Italian dishes are available. Of course authentic-tasting pizza from a genuine wood-fired oven is one of the most recommended of these.

“We focus on the quality of ingredients, freshness and the correct procedures in how to cook, these three things are the most important,” says Chef Alessandro.

The Sunset Grill, an alfresco restaurant on top of the resort. Here you can enjoy stunning sunset views.

Pool House
Pool House

Pool House, serves traditional Thai food, Italian and international cuisine. Next to it is the Pool Bar, an outdoor bar next to the main pool with an attractive ambience, especially in the evening. A buffet BBQ is also available twice a week on Tuesdays and Fridays from 6:30 – 9:30.

Beef Sirloin Tagliata – a simple dish but with a really powerful combination of ingredients. Made with sliced and grilled sirloin beef mixed with parmesan cheese, balsamic vinegar, this combination is a winning one.
